10 Minute Chicken Nachos Recipe

What you will need:

Corn chips
Chicken (You can use leftover baked chicken or purchased fully cooked chicken breast strips – both work great)
Refried beans
Shredded cheese
Lettuce
Tomatoes
Sour cream
Optional: Barbecue sauce – I like Sweet Baby Ray’s! 🙂

Heat up your refried beans in a microwave save bowl, and then you can start preparing your nachos.

Use a microwave plate and spread out your corn chips, then simply drop spoonfuls of refried beans, your cut-up chicken pieces and sprinkle on some shredded cheese. Heat for 1-2 mintues on power level 5 – microwave oven times vary. You just need to make sure that the cheese has melted.

After removing from the microwave, add the toppings you desire – lettuce, tomatoes, sour cream, barbecue sauce, etc.

So simple, and it is great that everyone can make their own plate themselves. Plus, it is a huge time saver and saves on the energy your oven would use to cook them.
