Cooking for Christmas with a Classic Flat Chicken #CozyChicken

That time of year is well, almost here. This has me thinking of delicious foods, desserts and all the in between. Alongside all the cooking and baking, there is also decorating, wrapping and enjoying. When many think Christmas meals, they think turkey or a turducken but this year we want to put a little birdy into your ear to have you consider cooking up some chicken too!


Since we are thinking chicken and all the delicious ideas out there, we’ve turned to the classic flat chicken option because let’s face it, it is so darn good! To spice things up, we turned to for even more inspiration with our recipe.

Christmas Foie Gras Chicken Recipe Inspiration

Now, we of course have no idea what Foie Gras is so we’ve substituted several other spice options for our recipe, but love the inspiration that we’ve been given!

Butterflied Chicken and Herbs Recipe

  1. 1 whole chicken (3-4 lbs), giblets removed
  2. 2-3 TBS olive oil
  3. 6 sprigs rosemary, leaves torn off 2 of them
  4. 1 tablespoon basil
  5. 1 tablespoon oregano
  6. 1 head garlic
  7. Salt
  8. Pepper
  1. Preheat the oven to 400 F
  2. Butterfly Chicken (how to video below)
  3. Pat chicken dry (encourages a crispier skin)
  4. Spread a layer of parchment paper on a large baking sheet
  5. Place butterflied chicken on baking sheet with parchment paper (skin side up)
  6. Distribute the garlic all around and underneath the chicken (you do not have to take off garlic skins)
  7. Pour olive oil over chicken
  8. Sprinkle rosemary leaves and basil & oregano
  9. Generously season with salt and pepper
  10. Insert a meat thermometer into the thigh without touching the bone.
  11. Roast until the thermometer reaches 77°C (170º F), 75 to 90 minutes.
  12. Let rest for 10 minutes
  1. Optional step: 10 minutes before done, grab a stick of butter and smear it over the top. Helps with the golden colour and texture!

Of course, a delicious meal is even more delicious with a beautiful setting. We went a little all out with our holiday meal, decorating and just having some whole hearted fun! We love decorating and Christmas is just the perfect time to go all out for every special meal.

Many of our decorations were purchased at our local Winners and Homesense stores. We also popped into Target Canada for a few of our items to really dec things out. You’d be amazed at the amazing decorations you can get at a lower price. With the right planning, layout and inspiration you can turn any table into a masterpiece of holiday cheer!

Don’t feel like you have to go over board either, a few staple items with some lovely table coverings can turn any table into an amazing gorgeous space.

How to Butterfly a Chicken

The following video is an awesome video done by in their tutorial section that teaches you how to butterfly (Spatchcock) a chicken. Not only did this help but made me not so petrified to butterfly my chickens on my own!
