Snickerdoodles Cookie Recipe

I’ve been trying to think of something to write for a few days now, and let’s just say this whole readjusting back to regular life after a month of holidays has been hard. Since I am unable to think of anything witty to write, I figured I’d share with you another one of my lovely recipes. This recipe is a favourite of mine and something I love eating whenever I make them.

I’ve always loved Snickerdoodle cookies and it’s become a favourite of the kids too. Hope you’re hungry!

Snickerdoodles Cookies

Ingredients
  1. 1 cup butter
  2. 3/4 cup sugar
  3. 2 extra large eggs (lightly beaten)
  4. 1 tsp vanilla extract
  5. 3 1/2 cups all purpose flour
  6. 1 tsp baking soda
  7. 1/2 tsp nutmeg
  8. pinch of salt
  9. 1/2 cup finely chopped pecans
Cinnamon Coating Ingredients
  1. 1 tbsp sugar
  2. 2 tsp ground cinnamon
Instructions
  1. Mix butter and sugar into a bowl
  2. Beat in eggs and vanilla extract
  3. Sift flour, baking soda, nutmeg and salt together into mixture
  4. Add pecans and mix until thoroughly combined
  5. Shape dough into balls
  6. Wrap in plastic wrap and chill for 30-60 minutes
  7. Preheat oven to 375 degrees
  8. Line two cookie sheets with parchment paper
Coating Directions
  1. Mix sugar and cinnamon in a shallow dish
  2. Scoop up tablespoons of cookie dough and form into balls
  3. Roll each ball in cinnamon mixture
  4. Put on prepared cookie sheets
  5. Bake in preheated oven for 10-12 minutes (until golden brown)
  6. Let cool on sheets for 5-10 minutes
  7. Transfer to wire racks to cool completely
