Snickerdoodles Cookie Recipe
I’ve been trying to think of something to write for a few days now, and let’s just say this whole readjusting back to regular life after a month of holidays has been hard. Since I am unable to think of anything witty to write, I figured I’d share with you another one of my lovely recipes. This recipe is a favourite of mine and something I love eating whenever I make them.
I’ve always loved Snickerdoodle cookies and it’s become a favourite of the kids too. Hope you’re hungry!
Snickerdoodles Cookie Recipe
Ingredients 
- 1 cup butter
- 3/4 cup sugar
- 2 extra large eggs (lightly beaten)
- 1 tsp vanilla extract
- 3 1/2 cups all purpose flour
- 1 tsp baking soda
- 1/2 tsp nutmeg
- pinch of salt
- 1/2 cup finely chopped pecans
- 1 tbsp sugar
- 2 tsp ground cinnamon
Directions
- Mix butter and sugar into a bowl
- Beat in eggs and vanilla extract
- Sift flour, baking soda, nutmeg and salt together into mixture
- Add pecans and mix until thoroughly combined
- Shape dough into balls
- Wrap in plastic wrap and chill for 30-60 minutes
- Preheat oven to 375 degrees
- Line two cookie sheets with parchment paper
Coating Directions
- Mix sugar and cinnamon in a shallow dish
- Scoop up tablespoons of cookie dough and form into balls
- Roll each ball in cinnamon mixture
- Put on prepared cookie sheets
- Bake in preheated oven for 10-12 minutes (until golden brown)
- Let cool on sheets for 5-10 minutes
- Transfer to wire racks to cool completely
